The Champagne Style of Blanc de Noirs is a wine made entirely from red grapes producing a white wine made from the clear juice of red-skinned grapes.
In this instance, the wine is a blend of 80% Pinot Meunier and 20% Pinot Noir.
The result is a slight golden coloured Champagne, with a more intense and fuller flavour than most Blanc de Blanc Champagne.
I found the red fruits offered a deep and complex drink that was bold and intwined with lively acid and a hint of lemon peel and fresh pastry, finishing with a strong and lively flowing mousse.
This is my new bench mark in Champagne enjoyment.
A wine to seek out and enjoy with or with out food, simply stunning.
The Food
The French describe wine as Masculine or Feminine (strong or gentle) this Champagne is Masculine, can stand up to bolder flavours. I enjoyed this wine with deep fried soft shell crab on chilly curried scrambled eggs, filled with diced potato then topped with a generous serve of black Yarra Valley caviar served with saffron mayo, and toasted home made sourdough bread.
Truly a breakfast to remember.

P.S. – Growers Champagnes like this; Are well worth seeking out as they offer bolder and far different flavours than the bigger name Champagne houses. As they are not making a wine to please the masses, but instead looking to please the drinkers of individual and different Champagne styles. (Real wines as I like to call them)
