MARGARITA
Half fill cocktail shaker with cracked ice
45ml/1.5 oz Tequila
45ml/1.5 oz pure Lemon juice
30ml/1 oz Cointreau liqueur
Dash of egg white
Shake and strain into 150ml champagne glass
Garnish with a twist of lemon rind
Preparation of glass: Moisten rim with lemon rind, spin rim in salt
Sip drink over salted edge
MIST
Fill 180 ml/6 oz old fashioned glass with thinly shaved ice
Add 60 ml/2 oz of your favourite Bourbon, Brandy or Scotch
Garnish with a twist of lemon rind
Add swizzle stick

Shake well, strain into cocktail glass

30 ml/1 oz. fresh Grapefruit juice
Shake and strain into 150 ml/5 oz. champagne glass
Garnish with maraschino cherry
SMIGGIN HOLES TODDY

Place 30 ml/1 oz. Galliano liqueur in a 6 oz. old fashioned glass
Add 60 ml/2 oz. Brandy
Stir gently with spoon and top up with hot water
Sprinkle nutmeg on top
SPIRIT TODDY
Place one lump of sugar in a 6 oz. old fashioned glass
Add 45 ml/1.5 oz of preferred Spirit
Fill glass with hot water
Garnish with 1/2 slice of lemon and 4 cloves
Stir gently
Leave spoon in glass when pouring hot water
STINGER
Half fill cocktail shaker with cracked ice
Add 60 ml/2 oz preferred White Spirit or Brandy
60 ml/2 oz BoIs White Creme de Menthe liqueur
Shake and strain into 150 ml/5 oz champagne glass
Squeeze and drop twist of lemon rind into cocktail
A Stinger on the rocks is served in a 180 ml/6 oz old fashioned glass filled with cracked ice
WITH DRY GINGER ALE
Half fill 210 ml/7 oz glass with cracked ice
Add 30 ml/1 oz Scotch, Brandy or Bourbon
Top up with dry ginger ale
Garnish with 1/2 slice of lemon
Add swizzle stick
WITH LIME AND LEMONADE
Half fill 210 ml/7 oz glass with cracked ice
Add 30 ml/1 oz Brandy or preferred spirit 15 ml/.5 oz
Lime juice cordial
Top up with lemonade Garnish with 1/2 slice of lemon
Add drinking straw and swizzle stick
