Aged a minimum of 3 years on lees before bottling.
The colour of this wine was a dark golden strawberry suggesting that it had been in the cellar for a couple of years.
On the nose, I found faint hints of cherry and dominated by the fragrance of strawberry fruit and a soft rose petal perfume.
In the mouth there was excellent, ripe strawberry acidity, running the length of the wine.
Giving the wine some weight making it more of a food wine, although you could easily enjoy this wine with out food, its is up to you.
The Food
I enjoyed this Champagne with pulled pork and string sliced apples topped with poached Eggs with hollandaise sauce. Strangely it worked very well as the wine had the weight and acid to pull it off.
