The tannins are considered a very important component because they help preserve the wine. However, most of us are not familiar with the concept of wine tannins. Often associated with red wines, tannins are an essential element for wine tastings. Tannins(or tannoids) are naturally occurring plant polyphenols that contribute to the colour, texture and mouthfeel of the wine. In grape wines, tannins are extracted from four primary sources: skins, seeds and stems.

Why Tannins Leave a Dry Taste in the Mouth?

Have you ever had a glass of red wine that tasted dry and bitter? It is because tannins are most commonly found in red wine, although some white wines have tannin too (from aging in wooden barrels or fermenting on skins). During red wine fermentation, the grape skins, seeds, stems are left in contact with the juice and pulp, thereby adding more tannic characteristics.

The astringency from the tannins is what causes the dry and puckery feeling in the mouth following the consumption of red wine. Some of the red wine varieties that are high in tannins are Cabernet Sauvignon, Montepulciano, and Petite Sirah. The tannic element in wine also depends on a number of factors including grape variety, vineyard conditions, winemaking practices and vintage variation.
